Warm chocolate banana oatmeal with peanut butter

If winter is appearing endless and temperatures call for you to remain in hibernation I have the perfect recipe for you. It features warm chocolate, bananas and peanut butter. Now can any recipe involving these three ingredients turn out bad? I don’t think so. And this dessert-like breakfast is not only a delicious and warming but also a healthful start of your day. It is so good that I, personally, don’t need it to be winter to enjoy it. I’ve been eating this throughout summer as well. I hope you will enjoy it as much as I do.

Warm chocolate banana oatmeal with peanut butter-1

Warm chocolate banana oatmeal with peanut butter

Serves 1

  • 1/3 cup of rolled oats
  • 1 ripe banana, mashed
  • 1/2 tablespoon of cocoa powder
  • 1 tablespoon chia seeds
  • 1 cup of unsweetened soy milk (or other milk of choice)*
  • 1/2 teaspoon of pure vanilla extract (optional)
  • liquid sweetener, to taste
  • 1 tablespoon of peanut butter (or other nut or seed butter of choice)

*You can also use sweetened milk of choice and skip the liquid sweetener at the end.

In a small saucepan, mash the banana and combine with the oats, cocoa powder and chia seeds. Add your milk of choice, stir, and bring to a boil over medium to high heat. Reducing the heat to medium-low, cook the oatmeal uncovered, stirring frequently, for about seven minutes or until the desired consistency has been reached.

Take the pan off the heat and stir in the vanilla extract. Transfer to a bowl and top with peanut butter or anything else you’d like. I like to add a variety of nuts to give this bowl some extra staying power. Enjoy!

UPDATE MARCH 13: I tweaked the recipe a bit based on some of the feedback I received. I love to hear from you if you tried this recipe, whether you loved it, made some adjustments, hated it (though I hope not!) or have whatever comment. Thanks!
